Instant Pot Chicken Adobo {Soy Free}

  • 2-3 Lbs Chicken Breast You can use chicken thighs if you want too!
  • 1 Tbs Avocado Oil
  • Salt + Pepper
  • 2 Tsp Garlic Powder
  • 4 Cloves Garlic Minced
  • 1/3 Cup Apple Cider Vinegar
  • 2/3 Cup Coconut Aminos
  • 2 Bay Leaves


  • In the Instant Pot (IP), choose the sautée mode. Heat up the avocado oil in the pot.
  • Put the chicken in the IP and heat until it's cooked on the outside. The chicken will be a white or brown on the outside.
  • Turn off the IP and add the rest of the ingredients into the pot. Mix well.
  • Choose the manual button and cook high pressure for 10 minutes. Make sure you close the vent to sealed.
  • When the IP beeps that it's done, vent it immediately and take out the chicken.
  • Turn on the sautée feature and reduce the sauce until it's a little more thick. I will use a whisk to help mix the sauce as it reduces. Pour over the chicken when it's done.
