In a large skillet over med/high heat, put some coconut oil in a pan and let melt.
Place the chopped sweet potatoes, onions, and peppers into the skillet and cook until potatoes are soft. The time varies depending on how big you chopped the potatoes. Add more coconut oil to the skillet if you need to prevent burning and sticking. Use a lid over your skillet to accelerate the cooking time.
Once finished cooking, top with salt + pepper to taste! I love using an all-seasons salt from Simply Organic!
