Instant Pot Chicken Adobo {Soy Free}

Growing up, this was one of my favorite dishes that my dad cooked for us! We’re Filipino, so I wanted to dig into my roots a little bit tonight and make a classic Filipino dish – chicken adobo. But, I specifically wanted Instant Pot chicken adobo.

If you haven’t heard of the instant pot yet, where have you been? It’s all the rage right now because it cooks foods quickly and can help keep more nutrients intact due to the cooking method. Plus, it’s less clean up. Seriously.

As a mom, that’s a big one for me. You can sautée, pressure cook, and so much more in just one place! YEEEESS!

An ingredient that is used in classic adobo recipes is soy. We avoid soy for the most part due to these reasons that I wrote on the blog before. Soy sauce is a common ingredient in a lot of Asian dishes, but thankfully coconut aminos is a good alternative. It’s not perfect, but it definitely will do the trick in most cases. This was one of the tweaks that I had to do from our family recipe.

I loved how this recipe turned out and I’m happy I get another recipe to add to my Instant Pot! You can do this recipe in a skillet as well!

Instant Pot Chicken Adobo

Instant Pot Chicken Adobo {Soy Free}

Ingredients

  • 2-3 Lbs Chicken Breast You can use chicken thighs if you want too!
  • 1 Tbs Avocado Oil
  • Salt + Pepper
  • 2 Tsp Garlic Powder
  • 4 Cloves Garlic Minced
  • 1/3 Cup Apple Cider Vinegar
  • 2/3 Cup Coconut Aminos
  • 2 Bay Leaves

Instructions

  • In the Instant Pot (IP), choose the sautée mode. Heat up the avocado oil in the pot.
  • Put the chicken in the IP and heat until it's cooked on the outside. The chicken will be a white or brown on the outside.
  • Turn off the IP and add the rest of the ingredients into the pot. Mix well.
  • Choose the manual button and cook high pressure for 10 minutes. Make sure you close the vent to sealed.
  • When the IP beeps that it's done, vent it immediately and take out the chicken.
  • Turn on the sautée feature and reduce the sauce until it's a little more thick. I will use a whisk to help mix the sauce as it reduces. Pour over the chicken when it's done.
